My version of delicious chocolate chip cookies for my husband since he cannot eat all that sugar anymore.

Step One: Mix Ingredients Together

 

1 cup Kerrygold butter

1 1/2 cups granulated xylitol

2 eggs

1 tsp. vanilla extract

Mix all above ingredients together.

 

Step Three: Stir in Chocolate Chips

 

2 cups semi-sweet chocolate chips

Drop by teaspoonsful onto lightly greased cookie sheet about 2 inches apart.

 

Step Four: Bake

 

Bake at 375 degrees for 8 to 10 minutes.

Allow to cool and enjoy!

Step Two: Mix Dry Ingredients Together

2 1/4 cups almond flour

1 teaspoon baking soda

1 teaspoon salt

Combine flour, baking soda and salt in sifter.  Sift dry ingredients into creamed mixture, stirring to blend thoroughly.
